Welsh rarebit, meet macaroni cheese

  • 350g Co-op pasta (eg penne, macaroni or any shape you like)
  • 50g unsalted butter
  • 50g Co-op plain flour
  • 250ml Co-op semi skimmed milk
  • 250ml ale (or dark beer)
  • 2 tsp Worcestershire sauce
  • 2 tsp Co-op wholegrain mustard
  • 100g Co-op British mature Cheddar, grated
  • 6 rashers Co-op unsmoked back bacon
  • Serve with chilli jam and tomatoes (optional)


  1. Cook the pasta for a minute less than it says on the pack, then drain and tip into a heatproof dish
  2. Meanwhile, melt the butter in a saucepan, add the flour and beat with a wooden spoon until it forms a paste
  3. Cook for a couple of mins
  4. Slowly mix in the milk, a bit at a time. You can add it all at once if you like, but you'll need to work harder to make the sauce smooth
  5. Stir in the ale, Worcestershire sauce and mustard and let it bubble gently for 5 minutes
  6. Add half the cheese and stir until it's melted
  7. Grill the bacon, then chop it up and scatter it over the pasta
  8. Pour your cheese sauce on top and then mix it all together
  9. Sprinkle the rest of the cheese on top and grill until golden
  10. Serve with some chilli jam and tomatoes, if you fancy
