Ingredients
- 4 large apples, we used Co-op Bramley
- 50g Co-op light brown soft sugar
- 50g sultanas
- 100g Co-op unsalted butter, softened, plus extra for greasing
- 100g Fairtrade caster sugar
- 2 Co-op British free range eggs
- 100g Co-op ground almonds
- 1 tsp ground cinnamon
- Flaked almonds and crème fraîche to serve (optional)
Method
- Peel and core the apples, then chop into bite-size pieces
- Put in a saucepan along with the light brown sugar and 1 tbsp cold water, then cook gently until the apple is soft
- Stir in the sultanas
- Preheat the oven to 180°C/fan 160°C/gas 4, then lightly grease a 600ml pudding bowl
- Cream together the butter and caster sugar in a bowl, then gradually beat in the eggs, before folding in the almonds and cinnamon
- Put the apple into the bottom of the pudding dish, then pour over the batter
- Bake for 45mins, or until golden and a skewer inserted into the centre comes out clean
- Serve scattered with flaked almonds, with a spoonful of crème fraîche, if you like
