Beer glazed british roast chicken

  • Co-op roast in the bag British whole chicken
  • 3 red peppers
  • 1 tbsp Co-op olive oil
  • 2 tbsp pale ale
  • 1 tsp English mustard
  • 2 tsp Co-op clear honey
  • 4 large Co-op British carrots, roughly chopped
  • 200g pack Co-op British purple sprouting broccoli
  • 1 lemon, cut into wedges


  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Roast the chicken according to the pack instructions
  3. Meanwhile, place the peppers on a baking tray, drizzle over the oil and roast for 30 mins
  4. Transfer to a sealed plastic bag to cool, then remove the skins, cut open and discard the seeds
  5. Mix together the ale, mustard and honey
  6. Remove the chicken from the oven and carefully cut open the roasting bag
  7. Season the chicken, brush all over with the beer glaze and roast for another 20 mins, basting occasionally
  8. Meanwhile, boil the carrots for 10 mins until tender, adding the broccoli for the last 3 mins
  9. Drain and set the broccoli aside
  10. Purée the carrots and peppers, then season to taste
  11. Serve the chicken with the broccoli, pepper and carrot purée, and some lemon wedges on the side
