A delicious way to use British sprouts and Co-op free range eggs

Ingredients
- 350g potatoes, peeled and diced
- 1 onion, diced
- 1 tbsp Co-op olive oil
- 2 cloves garlic, finely chopped
- 100g Co-op British Brussels sprouts, thinly sliced
- 1/2 tsp dried herbs
- 20g Co-op unsalted butter
- 2 Co-op British eggs
Method
- Boil the potatoes for 10 mins, until tender
- Drain and set aside
- Meanwhile, gently fry the onion in the oil for 3-4 mins, until soft
- Add the garlic and cook for 2 more mins before adding the sprouts and 1 tbsp water
- Cook on a medium heat for 8-10 mins, until the sprouts are tender
- Add the potatoes to the pan and gently crush with the back of a wooden spoon
- Add the dried herbs and butter and cook for 5 mins, or until the potatoes begin to brown
- Set aside to cool
- When cool enough to handle, shape the mixture into 2 patties and cook for 3-4 mins on each side, until golden
- While the patties are cooking, bring a pan of water to a simmer
- Gently break in the eggs and poach for 2-3 mins
- When cooked, remove from the water and drain
- To serve, top each patty with a poached egg and season
