A delicious way to use British sprouts and Co-op free range eggs

  • 350g potatoes, peeled and diced
  • 1 onion, diced
  • 1 tbsp Co-op olive oil
  • 2 cloves garlic, finely chopped
  • 100g Co-op British Brussels sprouts, thinly sliced
  • 1/2 tsp dried herbs
  • 20g Co-op unsalted butter
  • 2 Co-op British eggs


  1. Boil the potatoes for 10 mins, until tender
  2. Drain and set aside
  3. Meanwhile, gently fry the onion in the oil for 3-4 mins, until soft
  4. Add the garlic and cook for 2 more mins before adding the sprouts and 1 tbsp water
  5. Cook on a medium heat for 8-10 mins, until the sprouts are tender
  6. Add the potatoes to the pan and gently crush with the back of a wooden spoon
  7. Add the dried herbs and butter and cook for 5 mins, or until the potatoes begin to brown
  8. Set aside to cool
  9. When cool enough to handle, shape the mixture into 2 patties and cook for 3-4 mins on each side, until golden
  10. While the patties are cooking, bring a pan of water to a simmer
  11. Gently break in the eggs and poach for 2-3 mins
  12. When cooked, remove from the water and drain
  13. To serve, top each patty with a poached egg and season
