  • 1 cauliflower, cut into small florets
  • 30g Co-op unsalted butter
  • 4 sprigs fresh thyme, or 1/2 tsp dried
  • 30g Co-op plain flour
  • 100ml Co-op semi-skimmed milk
  • 200ml vegetable stock
  • 20g Co-op Irresistible Somerset vintage Cheddar, finely grated
  • 100g Co-op Irresistible Stilton
  • 15g fresh breadcrumbs


  1. Preheat the oven to 180°C/fan 160°C/Gas 4
  2. Bring a pan of water to the boil and cook the cauliflower for 3-4 mins, until just tender
  3. Drain and scatter in a medium baking dish
  4. Heat the butter and thyme in the pan until melted, then stir in the flour and cook for 1 minute
  5. Remove from the heat and gradually add in the milk and vegetable stock until you have a smooth liquid
  6. Put the pan back onto the heat and stir until boiling
  7. Turn down to a simmer and cook for 2 mins until thickened
  8. Stir in the Cheddar and three quarters of the Stilton
  9. Remove from the heat and pour over the cauliflower in the baking dish
  10. Sprinkle over the remaining Stilton and the breadcrumbs
  11. Cook in the oven for 25 mins until golden
