Ingredients
- 1 cauliflower, cut into small florets
- 30g Co-op unsalted butter
- 4 sprigs fresh thyme, or 1/2 tsp dried
- 30g Co-op plain flour
- 100ml Co-op semi-skimmed milk
- 200ml vegetable stock
- 20g Co-op Irresistible Somerset vintage Cheddar, finely grated
- 100g Co-op Irresistible Stilton
- 15g fresh breadcrumbs
Method
- Preheat the oven to 180°C/fan 160°C/Gas 4
- Bring a pan of water to the boil and cook the cauliflower for 3-4 mins, until just tender
- Drain and scatter in a medium baking dish
- Heat the butter and thyme in the pan until melted, then stir in the flour and cook for 1 minute
- Remove from the heat and gradually add in the milk and vegetable stock until you have a smooth liquid
- Put the pan back onto the heat and stir until boiling
- Turn down to a simmer and cook for 2 mins until thickened
- Stir in the Cheddar and three quarters of the Stilton
- Remove from the heat and pour over the cauliflower in the baking dish
- Sprinkle over the remaining Stilton and the breadcrumbs
- Cook in the oven for 25 mins until golden
