  • 2 x 400g packs Co-op gnocchi
  • 300g tub Co-op Irresistible pomodoro sauce
  • 160g baby spinach
  • 180g Co-op cherry tomatoes, halved
  • 125g ball Co-op mozzarella, torn
  • 25g pack ready salted crisps, lightly crushed
  • 115g bag Co-op baby leaf salad
  • 1/2 Co-op cucumber
  • 1 Co-op British carrot, thinly sliced
  • 1 spring onion, trimmed and sliced
  • 1/2 red pepper, sliced


  1. Cook the gnocchi according to the pack instructions
  2. Drain well and return to the pan. Stir in the pasta sauce, spinach and cherry tomatoes
  3. Cook over a medium heat, for 1-2 mins, until the sauce is piping hot and the spinach has just wilted and season
  4. Preheat your grill to medium
  5. Transfer the gnocchi mixture to a large, shallow baking dish
  6. Scatter over the mozzarella and crushed crisps
  7. Place the dish under the grill for 2-3 mins, until the cheese is golden and bubbling
  8. In a large bowl toss together the baby leaf salad, cucumber, carrot, spring onion and red pepper
  9. Serve with the gnocchi
