Ingredients
- 1/2 tbsp Co-op olive oil
- 1/2 onion, diced
- 1 clove garlic, crushed
- 2 Co-op British chicken breasts, diced
- 1/2 x 240g pack Co-op broccoli, courgette and fine green beans
- 1/2 x 500g jar Co-op korma sauce
- Small handful coriander, finely chopped
- 400g pack Co-op chilled mashed potato
Method
- Preheat the oven to 220°C/fan 200°C/Gas 7
- Heat the oil in a large saucepan and add the onion and garlic
- Cover and cook for 3 mins, stirring halfway through
- Add the chicken, veg, sauce and 11/2 tbsp water
- Cover and cook for 5 more mins, until bubbling
- Stir half the coriander into the mash
- Spoon the curry into a pie dish, top with the mash, then sprinkle over the rest of the coriander and bake for 20 mins, until golden
