Ingredients
- 2 tbsp Co-op vegetable oil, plus extra for brushing
- 2 Co-op British chicken breast fillets, diced
- 1 tbsp Co-op tikka masala paste
- 1½ tsp garam masala
- 75g Co-op spinach
- 100g Co-op 0% fat Greek style natural yogurt
- 125g Co-op Italian passata
- 200g Co-op self raising white flour, plus extra for dusting
- ½ courgette, peeled into ribbons
- 50g Co-op Italian mozzarella, sliced
- 1 tsp Co-op mango chutney
- Juice of ½ lime
- Coriander leaves, to garnish
Method
- Heat 1 tbsp of the vegetable oil in a frying pan over a medium heat and cook the chicken for 5 mins
- Add the tikka paste and 1 tsp of the garam masala, then cook for 1 minute
- Stir in the spinach
- Once it’s wilted, add 50g of the yogurt and all the passata
- Cook for 2 mins more on a low heat, then season
- Mix the flour with 85ml water and the remaining oil
- Knead for 2 mins, then cut the dough in half
- On a floured surface, roll into two 23cm circles
- Heat a large frying pan over a medium-high heat, brush with oil and cook the pizza bases, one at a time, for 2 mins on each side
- Preheat the oven to 220°C/fan 200°C/gas 7
- Put the bases onto two baking trays
- Spoon over the chicken mixture and add the courgette
- Scatter over the mozzarella, then bake for 10-12 mins, until golden
- Mix the remaining yogurt and garam masala with the mango chutney and lime juice, then drizzle over the pizza
- Garnish with the coriander leaves to serve
