Chicken tikka pizza

  • 2 tbsp Co-op vegetable oil, plus extra for brushing
  • 2 Co-op British chicken breast fillets, diced
  • 1 tbsp Co-op tikka masala paste
  • 1½ tsp garam masala
  • 75g Co-op spinach
  • 100g Co-op 0% fat Greek style natural yogurt
  • 125g Co-op Italian passata
  • 200g Co-op self raising white flour, plus extra for dusting
  • ½ courgette, peeled into ribbons
  • 50g Co-op Italian mozzarella, sliced
  • 1 tsp Co-op mango chutney
  • Juice of ½ lime
  • Coriander leaves, to garnish


  1. Heat 1 tbsp of the vegetable oil in a frying pan over a medium heat and cook the chicken for 5 mins
  2. Add the tikka paste and 1 tsp of the garam masala, then cook for 1 minute
  3. Stir in the spinach
  4. Once it’s wilted, add 50g of the yogurt and all the passata
  5. Cook for 2 mins more on a low heat, then season
  6. Mix the flour with 85ml water and the remaining oil
  7. Knead for 2 mins, then cut the dough in half
  8. On a floured surface, roll into two 23cm circles
  9. Heat a large frying pan over a medium-high heat, brush with oil and cook the pizza bases, one at a time, for 2 mins on each side
  10. Preheat the oven to 220°C/fan 200°C/gas 7
  11. Put the bases onto two baking trays
  12. Spoon over the chicken mixture and add the courgette
  13. Scatter over the mozzarella, then bake for 10-12 mins, until golden
  14. Mix the remaining yogurt and garam masala with the mango chutney and lime juice, then drizzle over the pizza
  15. Garnish with the coriander leaves to serve
