
Chilli beef flatbreads

Ingredients
For the flatbreads
- 275g Co-op plain white flour,plus extra for dusting
- ½ tsp Co-op baking powder
- 175g Co-op 0% fat Greek style natural yogurt, plus 2 tbsp
For the chilli beef
- 3 tbsp Co-op olive oil
- 450g pack Co-op 12% fat British beef mince
- 2 garlic cloves, crushed
- 1 large carrot, grated
- 2 tbsp Co-op Thai sweet chilli sauce
To serve
- 1 red chilli, sliced
- 2 spring onions, sliced
Method
- Mix the flour and baking powder in a large bowl
- Make a well in the centre, then stir in the 175g yogurt and 1 tbsp of the oil using a fork
- Once it starts to form a dough, shape into a ball with your hands and knead on a floured surface for 5 mins, until smooth and elastic
- Put back in the bowl, cover and set aside
- Preheat the oven to 200°C/fan 180°C/gas 6
- Heat 1 tbsp more oil in a frying pan and cook the mince on a high heat for 5 mins, until golden
- Stir in the garlic and carrot, then cook for 2 mins
- Add the chilli sauce and cook for 1 minute, then set aside
- Halve the dough, and roll each one into a disc 20-25cm across and 0.5cm thick
- Heat the remaining oil in the pan you used for the beef, and cook the breads for 2-3 mins on each side, until golden
- Transfer them to lined baking trays and top with the mince mixture
- Bake for 8-10 mins until golden and caramelised
- Leave to cool while you mix the 2 tbsp yogurt with some black pepper, then drizzle over
- Top with the chilli and spring onion
