Big Bag Option

Ingredients

  • 2 x 150g bars Co-op Fairtrade dark chocolate
  • 150ml Co-op double cream
  • 100ml Co-op Delaney's country cream
  • 100g Fairtrade icing sugar
  • 100g Co-op desiccated coconut

Method

  1. Break the chocolate into a large bowl and pour over the double cream
  2. Microwave in 30-second bursts, stirring in between, until completely melted and smooth
  3. Mix in the country cream, then pour into a shallow roasting tin or large glass dish
  4. Cover the surface of the mixture directly with cling film and chill for 3-4 hours, until firm
  5. Remove the cling film and score the surface of the mixture into around 32 sections, then scoop out a piece at a time and roll into a ball
  6. Put the icing sugar and desiccated coconut into shallow dishes
  7. Roll the truffles, one at a time, in the sugar, then the coconut
  8. Place on a tray and chill until fully set
  9. Store chilled in an airtight container until ready to serve
