Ingredients

  • 20g Co-op unsalted butter
  • 2 tbsp Co-op olive oil
  • 200g Brussels sprouts, trimmed and thinly sliced
  • 125g pack Co-op baby spinach
  • 4 Co-op British free range eggs, beaten
  • 8 Co-op plain tortilla wraps, plus 1 extra to decorate (optional)
  • 100g Co-op blue Stilton, crumbled
  • Ketchup or sriracha, to decorate (optional)

Method

  1. Heat the butter and half the oil in a frying pan over a medium-high heat
  2. Cook the sprouts for 3-4 mins, until crispy
  3. Season, then transfer to a plate lined with kitchen paper
  4. Add the spinach to the pan, cook over a medium heat for 2-3 mins, until wilted, then drain on kitchen paper
  5. Wipe the pan clean with kitchen paper
  6. Add the rest of the olive oil and scramble the eggs gently over a low heat for 3-4 mins, until just cooked
  7. Lay a wrap flat on your chopping board and cut a line from the centre to the bottom
  8. Put a little crumbled Stilton on one quarter of the wrap, then continue with the spinach, sprouts and scrambled egg, until you have a different filling on each quarter
  9. Fold one quarter up over the quarter above it, then keep folding each quarter over until your wrap is fully folded up
  10. Repeat to make up the rest of the wraps
  11. Put the folded wraps, two at a time, into a dry frying pan over a medium heat, to warm through
  12. To serve, arrange two wraps on each plate in a Christmas tree shape
  13. Decorate with ketchup or sriracha and top with stars cut out of the extra wrap, if you like
