Ingredients

  • 100g Co-op cous cous
  • 1 tsp each cumin and turmeric
  • ½ tsp chilli flakes
  • 80g Co-op frozen British garden peas
  • 2 tbsp mixed chopped herbs (we used parsley, coriander and basil, including the stalks)
  • 1 tbsp capers, drained and roughly chopped
  • 1 small garlic clove, crushed
  • Juice of 1 lemon
  • 2 tbsp Co-op olive oil
  • 1 Co-op British free range egg, beaten
  • 3 tbsp Co-op plain flour
  • 2 tbsp Co-op 0% fat Greek style natural yogurt
  • Salad leaves, to serve

Method

  1. Cook the cous cous according to the pack instructions
  2. Stir in the cumin, turmeric, chilli flakes and peas, then set aside
  3. Meanwhile, mix the herbs with the capers, garlic, lemon juice and half the oil to make a dressing
  4. Season and set aside
  5. Season the cous cous mix and stir in the egg, flour and yogurt
  6. With slightly wet hands, form the mixture into 6 patties
  7. Heat the remaining oil in a pan, and fry the fritters for 2-3 mins on each side, until golden
  8. Drizzle over the herby dressing and serve with salad on the side
