The crispy breadcrumb coating and tangy sweet chilli dip make these cauliflower bites really tasty

Ingredients
- 100g Co-op Irresistible sourdough
- 1/4 tsp black pepper
- 1 Co-op British egg
- 1 small cauliflower
- 1/2 tbsp Co-op olive oil
- 1 Co-op ripe and ready to eat avocado, peeled and sliced
- 1 tbsp Co-op French dressing
- 4 tbsp Co-op fat free Greek style yogurt
- 1 tsp sweet chilli sauce
Method
- Preheat the oven to 200°C/fan 180°C/Gas 6
- Whizz the sourdough in a food processor to make chunky crumbs, then mix with the black pepper in a shallow bowl
- Beat the egg in a separate shallow bowl
- Cut the cauliflower into florets and dip in the egg, then the crumbs
- Put on a baking sheet, drizzle with olive oil and roast for 30 mins, until tender
- Meanwhile toss together a handful Co-op mixed leaf salad, sliced avocado and French dressing
- In a bowl, mix the yogurt with sweet chilli sauce
- Top the salad with the florets and serve with the spicy dip
