
Easy caramelised banana tart

This easy caramelised banana tart only requires four ingredients and is best served with a ball of vanilla ice cream

Ingredients
- 375g pack Co-op ready rolled puff pastry
- 50g Co-op salted butter
- 100g Co-op Fairtrade light brown soft sugar
- 5 ripe, but firm, Co-op Fairtrade bananas, peeled and cut into 2cm-thick discs
- Co-op Irresistible clotted cream vanilla ice cream, to serve
Method
- Preheat the oven to 180°C/fan 160°C/gas 4
- Unroll the pastry then, using a 23cm round ovenproof pan as a template, cut out a circle about 2cm wider than your pan
- Put the pastry disc in the fridge while you make the filling
- Put the butter and sugar in the 23cm pan over a medium heat
- When the butter has melted and the sugar dissolved, turn up the heat and allow to bubble
- Swirl the pan occasionally until the mixture has darkened in colour and a caramel has formed, being careful it doesn’t burn
- Remove the pan from the heat
- Carefully arrange the banana slices in a single layer in the caramel and top with the pastry disc, tucking the edges into the side of the pan
- Make two holes in the pastry with the tip of a sharp knife, to allow the steam to escape, then bake for 30 mins or until the pastry is golden and crisp
- Allow the tart to cool for 5 mins before very carefully turning out onto a serving dish. Serve immediately, or at room temperature with a scoop of vanilla ice cream
