Ingredients

  • 375g pack Co-op ready rolled puff pastry
  • 50g Co-op salted butter
  • 100g Co-op Fairtrade light brown soft sugar
  • 5 ripe, but firm, Co-op Fairtrade bananas, peeled and cut into 2cm-thick discs
  • Co-op Irresistible clotted cream vanilla ice cream, to serve

Method

  1. Preheat the oven to 180°C/fan 160°C/gas 4
  2. Unroll the pastry then, using a 23cm round ovenproof pan as a template, cut out a circle about 2cm wider than your pan
  3. Put the pastry disc in the fridge while you make the filling
  4. Put the butter and sugar in the 23cm pan over a medium heat
  5. When the butter has melted and the sugar dissolved, turn up the heat and allow to bubble
  6. Swirl the pan occasionally until the mixture has darkened in colour and a caramel has formed, being careful it doesn’t burn
  7. Remove the pan from the heat
  8. Carefully arrange the banana slices in a single layer in the caramel and top with the pastry disc, tucking the edges into the side of the pan
  9. Make two holes in the pastry with the tip of a sharp knife, to allow the steam to escape, then bake for 30 mins or until the pastry is golden and crisp
  10. Allow the tart to cool for 5 mins before very carefully turning out onto a serving dish. Serve immediately, or at room temperature with a scoop of vanilla ice cream
