Ingredients

  • 200g Co-op British tenderstem broccoli
  • 1 rasher Co-op British smoked streaky bacon
  • 250g Co-op 5% fat British lean beef steak mince
  • 2 spring onions, trimmed and sliced, green tops reserved
  • 1 red chilli, deseeded and finely chopped
  • 1 tbsp Co-op olive oil, plus extra for greasing
  • 2 Co-op soft tortillas
  • 100g Co-op tomato & herb pizza topper sauce
  • 6 Co-op British piccolo tomatoes, halved
  • 50g Co-op mozzarella, grated
  • 2 tsp Co-op wholegrain mustard
  • 1 tsp white wine vinegar
  • 1 tsp Co-op clear honey

Method

  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Add the broccoli to a pan of boiling water then simmer, covered, for about 4 mins until just tender
  3. Drain and set aside
  4. Meanwhile, grill the bacon until crisp and set aside
  5. In a large, nonstick frying pan, fry the mince, the spring onion whites and two thirds of the chilli, breaking up the mince with a wooden spoon until browned
  6. Grease a large baking tray and lay the tortillas on it
  7. Spread with the pizza sauce and cover with the mince
  8. Arrange the tomatoes on top, sprinkle with mozzarella and cook in the oven for about 6 mins
  9. Meanwhile, whisk together the oil, mustard, vinegar, honey and the rest of the chilli, add the broccoli and toss to coat
  10. Scatter the spring onion tops over the pizzas, and serve the broccoli on the side, with the bacon crumbled over the top
