  • 350g strong white bread flour, plus extra for dusting
  • 7g sachet dried yeast
  • 2 tbsp Co-op olive oil
  • 2 tbsp tomato passata
  • Tear 50g Co-op mozzarella
  • 10g Parmesan, finely grated
  • Handful fresh basil leaves


  1. Put the flour in a bowl and sprinkle over the yeast
  2. Make a well in the middle and pour in the oil and 200ml warm water
  3. Stir together then tip onto a floured surface
  4. Knead for about 5 mins until smooth then put into a clean bowl, cover and leave until it's doubled in size (this will take about 1 hour)
  5. Take the dough out of the bowl and divide into 3 pieces
  6. Roll each one into a 20cm circle
  7. Heat a large ovenproof, nonstick frying pan over a high heat
  8. Lower the heat to medium and carefully put a circle of dough in the pan
  9. Cook the base for 4 mins until golden brown
  10. Preheat the grill
  11. Spread the passata over a cooked pizza base, leaving a border of about 2cm
  12. Tear the mozzarella and scatter over the top, then sprinkle over the Parmesan
  13. Sprinkle a few basil leaves over the top
  14. Grill for 5 mins or until golden and bubbling
  15. To serve, sprinkle over some more basil leaves, drizzle with a little Co-op garlic oil and add some freshly ground black pepper
