Ingredients
- 350g strong white bread flour, plus extra for dusting
- 7g sachet dried yeast
- 2 tbsp Co-op olive oil
- 2 tbsp tomato passata
- Tear 50g Co-op mozzarella
- 10g Parmesan, finely grated
- Handful fresh basil leaves
Method
- Put the flour in a bowl and sprinkle over the yeast
- Make a well in the middle and pour in the oil and 200ml warm water
- Stir together then tip onto a floured surface
- Knead for about 5 mins until smooth then put into a clean bowl, cover and leave until it's doubled in size (this will take about 1 hour)
- Take the dough out of the bowl and divide into 3 pieces
- Roll each one into a 20cm circle
- Heat a large ovenproof, nonstick frying pan over a high heat
- Lower the heat to medium and carefully put a circle of dough in the pan
- Cook the base for 4 mins until golden brown
- Preheat the grill
- Spread the passata over a cooked pizza base, leaving a border of about 2cm
- Tear the mozzarella and scatter over the top, then sprinkle over the Parmesan
- Sprinkle a few basil leaves over the top
- Grill for 5 mins or until golden and bubbling
- To serve, sprinkle over some more basil leaves, drizzle with a little Co-op garlic oil and add some freshly ground black pepper
