Ingredients
- 500g maris piper potatoes, peeled and roughly chopped
- 1/2 tbsp Co-op olive oil
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 400g can Co-op chopped tomatoes
- 1 tsp dried mixed herbs
- 125g Co-op plain flour, plus extra for dusting
- 1 Co-op British free range egg, beaten
- 40g Co-op Parmesan, finely grated
- 1/2 pack flat leaf parsley, roughly chopped
Method
- Bring a pan of water to the boil and cook the potatoes for 20 mins 2
- Meanwhile, heat the oil in a frying pan over a medium heat and cook the onion for 8 mins, until softened
- Add the garlic, cook for 1 more minute, then add the tomatoes
- 1/2 fill the can with water then pour in
- Stir in the dried herbs, season, then simmer for 10 mins
- Drain the potatoes, then leave to steam dry for a few mins
- Mash in a large bowl, season, then sift over the flour and add the egg Using a fork, gently mix everything together to form a dough, without overworking it
- Tip the dough onto a floured surface and divide into 2 pieces
- With floured hands, roll each piece into a long rope shape, about 2cm wide
- Cut into 2cm pieces and set aside
- Bring a pan of water to the boil and cook the gnocchi for 1-2 mins until they float to the top
- Drain and stir into the sauce
- Sprinkle over the Parmesan and grill until golden Season, then serve scattered with the parsley
