
Ham and charred sweetcorn chowder

Ingredients
- 1 tbsp rapeseed oil
- 15g Co-op unsalted butter
- 2 x 325g cans Co-op naturally sweet sweetcorn in water, drained
- 1 onion, chopped
- 2 thyme sprigs
- 2 baking potatoes, peeled and diced into 1cm cubes
- 500ml vegetable stock, made with 1 reduced-salt stock cube
- 300ml Co-op whole milk
- 200g leftover roast ham, sliced, or 2 x 120g packs Co-op Irresistible thick carved honey roast ham, sliced
- 1-2 tbsp finely chopped chives
- Crusty bread, to serve
Method
- Heat the oil and butter in a large saucepan over a high heat
- Fry the sweetcorn and onion, stirring regularly, for 10-12 mins, until dark golden
- Add the thyme, potatoes and vegetable stock
- Season with black pepper and stir
- Bring to a simmer and cook for 10 mins
- Remove the thyme stalks
- Add the milk and ham to the pan and cook for 1-2 mins, until heated through
- Divide between bowls and sprinkle with the chopped chives
- Serve with crusty bread on the side
