Ingredients

  • 1 tbsp rapeseed oil
  • 15g Co-op unsalted butter
  • 2 x 325g cans Co-op naturally sweet sweetcorn in water, drained
  • 1 onion, chopped
  • 2 thyme sprigs
  • 2 baking potatoes, peeled and diced into 1cm cubes
  • 500ml vegetable stock, made with 1 reduced-salt stock cube
  • 300ml Co-op whole milk
  • 200g leftover roast ham, sliced, or 2 x 120g packs Co-op Irresistible thick carved honey roast ham, sliced
  • 1-2 tbsp finely chopped chives
  • Crusty bread, to serve

Method

  1. Heat the oil and butter in a large saucepan over a high heat
  2. Fry the sweetcorn and onion, stirring regularly, for 10-12 mins, until dark golden
  3. Add the thyme, potatoes and vegetable stock
  4. Season with black pepper and stir
  5. Bring to a simmer and cook for 10 mins
  6. Remove the thyme stalks
  7. Add the milk and ham to the pan and cook for 1-2 mins, until heated through
  8. Divide between bowls and sprinkle with the chopped chives
  9. Serve with crusty bread on the side
