Ingredients

  • 1 tsp brown sugar
  • 1 tsp Co-op wholegrain mustard
  • 10g fresh dill or parsley, or a pinch dried dill
  • 2 tbsp Co-op olive oil
  • 2 Co-op Scottish salmon fillets
  • Juice of 1 lemon
  • 200g Co-op British broccoli florets
  • Freshly ground black pepper
  • Serve with handful watercress and tartare sauce (optional)

Method

  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Mix together the sugar, mustard, parsley, dill, if using, and 1 1/2 tbsp of the oil
  3. Lay the salmon skin side down in a baking tray and spread with half the dressing
  4. Stir the lemon juice into the remaining half and set aside
  5. Place the broccoli around the fish and drizzle over the remaining oil
  6. Season with pepper and bake for 15-18 mins, until cooked through
  7. Serve with watercress and tartare sauce, if using, with the mustard dressing drizzled over
