Ingredients

  • 600g Co-op white potatoes, cut into wedges
  • 1 tbsp Co-op olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried mixed herbs
  • 1 Co-op British free range egg
  • 2 tsp Co-op tomato ketchup 20g Co-op plain white flour
  • 70g leftover bread, whizzed into breadcrumbs
  • 360g pack Co-op frozen cod fillets, defrosted according to the pack instructions, or 2 x 240g packs skinless, boneless cod fillets
  • 350g Co-op frozen British garden peas
  • 30g Co-op reduced fat crème fraîche
  • 4 tsp tartare sauce, to serve Lemon wedges, to serve
  • 1 tbsp chopped flat leaf parsley, to garnish

Method

  • Preheat the oven to 200°C/fan 180°C/gas 6
  • Put the potato wedges onto a baking tray and toss with the oil, paprika and mixed herbs, then season
  • Roast for 30 mins, or until golden and cooked through
  • Meanwhile, put the egg and ketchup into a shallow bowl and whisk together Put the flour and breadcrumbs in two separate bowls
  • Dab the fish with kitchen paper to remove any excess water
  • Dip into the flour, then the egg, then the breadcrumbs, until well coated
  • Place on a lined tray and bake for 20 mins, until cooked through and golden
  • Meanwhile, cook the peas according to the pack instructions
  • Drain, return to the pan, add the crème fraîche and lightly crush with a potato masher
  • Season, then serve with the fish, potato wedges, tartare sauce and lemon wedges, with the parsley sprinkled over
