Ingredients

  • Co-op Irresistible muscovado baked gammon joint, 750g
  • 300ml Fairtrade red wine
  • 1 onion, quartered
  • 2 bay leaves
  • 2 rosemary sprigs
  • 1 orange, juiced and zested into wide strips using a vegetable peeler
  • ½ tsp whole black peppercorns
  • 1 cinnamon stick
  • 10 whole cloves, plus extra to stud (optional)
  • 4 tbsp Co-op clear honey

Method

  1. Put the gammon into a medium saucepan and pour over the wine
  2. Add the onion, bay leaves, rosemary, orange juice and zest, and whole spices
  3. Add water to just cover the gammon, bring to a simmer, then cover with a lid and cook for 1 hour-1 hour 30mins, until cooked through
  4. Transfer the gammon to a roasting tin and stud with cloves, if you like
  5. Strain the poaching liquid, discard the onion, herbs and spices, and measure out 500ml into a saucepan
  6. Add the honey and bring to a boil, then reduce the heat and simmer until thick and syrupy – this will take about 15-20 mins
  7. Preheat the oven to 200°C/fan 180°C/gas 6
  8. Brush half of the glaze over the meat and roast in the oven for 10 mins
  9. Brush with the rest of the glaze and return to the oven for a further 5-10 mins, until sticky and beginning to caramelise
  10. Allow the ham to rest for 10 mins before slicing
