Ingredients

  • 15g Co-op unsalted butter
  • 1/2 tbsp Co-op plain flour
  • 300ml Co-op semi-skimmed milk
  • 60g Co-op Irresistible Somerset vintage Cheddar, grated
  • Pinch freshly grated nutmeg
  • 250g pack Co-op turkey steaks
  • 1 tsp Co-op olive oil
  • 2 rashers Co-op British smoked rindless streaky bacon
  • 3 tomatoes, sliced
  • 2 slices Co-op white bread, toasted
  • Handful flat leaf parsley, finely chopped

Method

  1. Melt the butter in a saucepan, stir in the flour then trickle in the milk a little at a time, stirring constantly, until thickened
  2. Add the cheese and stir until melted
  3. Season to taste, add the nutmeg then set aside
  4. Brush the turkey steaks with the oil and add to a frying pan along with the bacon and 4 tomato slices
  5. Cook for about 5 mins, turning regularly, until the turkey steaks are cooked through
  6. Set aside the bacon and tomato and keep warm
  7. Lay the toast in an ovenproof dish and top with the turkey and uncooked tomato slices
  8. Pour over the cheese sauce, then grill until bubbling
  9. Serve the rarebit topped with the cooked tomato and bacon, plus a sprinkling of parsley
