This meaty twist on the classic Welsh dish is a favourite in the USA, where it’s known as a Kentucky Hot Brown Brilliant comfort food

Ingredients
- 15g Co-op unsalted butter
- 1/2 tbsp Co-op plain flour
- 300ml Co-op semi-skimmed milk
- 60g Co-op Irresistible Somerset vintage Cheddar, grated
- Pinch freshly grated nutmeg
- 250g pack Co-op turkey steaks
- 1 tsp Co-op olive oil
- 2 rashers Co-op British smoked rindless streaky bacon
- 3 tomatoes, sliced
- 2 slices Co-op white bread, toasted
- Handful flat leaf parsley, finely chopped
Method
- Melt the butter in a saucepan, stir in the flour then trickle in the milk a little at a time, stirring constantly, until thickened
- Add the cheese and stir until melted
- Season to taste, add the nutmeg then set aside
- Brush the turkey steaks with the oil and add to a frying pan along with the bacon and 4 tomato slices
- Cook for about 5 mins, turning regularly, until the turkey steaks are cooked through
- Set aside the bacon and tomato and keep warm
- Lay the toast in an ovenproof dish and top with the turkey and uncooked tomato slices
- Pour over the cheese sauce, then grill until bubbling
- Serve the rarebit topped with the cooked tomato and bacon, plus a sprinkling of parsley
