
Italian-style marinated courgettes

Ingredients
- 2 large Co-op British courgettes, cut into rounds about 1cm thick
- 100ml Co-op olive oil
- Zest and juice of 1 lemon
- 1 tbsp Co-op white wine vinegar
- 1 tsp Fairtrade caster sugar
- 1 garlic clove, unpeeled, bashed
- ½ tsp chilli flakes
- ½ tsp freshly ground black pepper
- 1 tsp chopped rosemary leaves
- 1 tsp thyme leaves
- ½ tsp dried mixed herbs
- Bread, cheese and cured meat, to serve (optional)
Method
- Heat a griddle or frying pan over a medium-high heat
- Put the courgette rounds in a large bowl, drizzle over 2 tbsp of the oil and toss to coat
- Griddle or fry in batches for 3-4 mins on each side, until charred and soft
- Transfer to a bowl, then add the lemon zest and juice, white wine vinegar, caster sugar, garlic, chilli flakes, black pepper and all the herbs — fresh and dried
- Toss together, then transfer to an airtight container, along with any liquid from the bowl
- Add the remaining oil, then marinate in the fridge for at least 2 hours — overnight, if you have time
- Remove the courgettes from the fridge 30 mins before serving to come to room temperature
- They’re great with crusty bread, cheese and cured meat for lunch
