Ingredients

  • 300g jar Co-op mild salsa
  • 1 tsp smoked paprika
  • 200g leftover cooked turkey, shredded
  • 400g can black beans, rinsed and drained
  • 250g pack Co-op golden vegetable rice
  • 4 Co-op tortilla wraps
  • 60g grated leftover hard cheese
  • 170g pack Co-op guacamole dip
  • 2 tbsp Co-op sliced green jalapeno peppers, optional
  • 100g Co-op baby leaf salad, to serve, optional

Method

  1. Heat oven to 200°C/180°C fan/Mark 6. Line a baking dish or tray with non-stick baking paper.

  2. In a frying pan over a medium heat, add two-thirds of the salsa, paprika, turkey and black beans with 3tbsp water. Season with black pepper. Bring to a simmer for 2-3 minutes until thickened and piping hot. Meanwhile, heat rice according to pack instructions.

  3. Lay out the tortillas on a clean worktop. Add a quarter of the turkey filling to each, spooning it in a line in the middle of each tortilla, leaving a 6-7cm gap at either end. Divide the rice between each, placing below the line of turkey filling. Fold up the bottom of the tortilla to cover the rice and turkey filling, fold in the sides, then continue rolling the burrito to fully enclose the filling.

  4. Place each burrito into the prepared dish, then dollop over the remaining salsa and sprinkle with cheese. Bake for 8mins until the cheese is melted. Remove from the oven, and serve with a guacamole, salad and jalapenos, if using.

TIP: for extra heat add a few chopped jalapeno slices or a pinch of chilli flakes to the turkey mixture
