Ingredients
- 2 slices Co-op farmhouse white thick sliced bread, crusts removed
- Zest of 1 lime, plus 2 tsp juice
- 2 tsp dried coriander
- 1 spring onion, finely chopped
- Freshly ground black pepper
- 3 tsp Co-op olive oil
- 240g pack Co-op skinless, boneless cod fillets
- 1/2 Co-op British romaine lettuce, shredded
- 1 tbsp Co-op Caesar dressing
- 10g Co-op Parmesan, shaved
Method
- Peheat the oven to 200°C/fan 180°C/Gas 6
- Cut 1 slice of the bread into cubes and set aside
- Whizz the other slice to make breadcrumbs, then mix in a bowl with the lime zest, coriander, spring onion, some black pepper and 1 tsp of the oil
- Place the cod fillets on a baking tray lined with greaseproof paper, drizzle with the lime juice, then spread the breadcrumb mixture evenly over both fillets
- Bake in the oven for about 15 mins or until the topping is crisp and the fish flakes easily
- Meanwhile, toss the bread cubes in the remaining oil, place on another baking tray and add to the oven for the last 8-10 mins of cooking time, until crisp and golden
- Dress the lettuce, top with the croutons, Parmesan and a grinding of pepper, and serve with the fish
