Ingredients

  • 1.2kg Co-op Irresistible Hereford beef roasting joint, at room temperature
  • 2 tsp rapeseed oil
  • 1 tbsp black peppercorns
  • 2-3 small Co-op British carrots, halved
  • 3 thyme sprigs, leaves only 180g Co-op British Tenderstem® broccoli
  • 1 tbsp lemon zest
  • 2 small leeks, cut into short lengths
  • 225g pack Co-op Irresistible piccolo tomatoes
  • 1 tbsp chopped flat leaf parsley

Method

  1. Preheat the oven to 180°C/fan 160°C/gas 4
  2. Put the beef in a large roasting tin and drizzle with 1 tsp of the oil
  3. Crush the peppercorns using a pestle and mortar or with the end of a rolling pin. Press them all over the top of the beef
  4. Arrange the carrots around the beef and sprinkle with the thyme
  5. Cook for an hour (or 1 hour 20 mins, if you prefer your beef well done), stirring the veg and spooning over any cooking juices after 30 mins
  6. Toss the broccoli with the lemon zest and remaining oil
  7. Remove the roasting tin from the oven
  8. Arrange the broccoli around the beef, along with the leeks and tomatoes, and scatter the parsley over the veg
  9. Cook for 15-20 mins more.
  10. Take out of the oven, cover the tin with foil and leave to rest for at least 15 mins
  11. Lift the beef out of the tin and carve on a chopping board to serve
