
Pak choi prawns

Ingredients
- 200g pack Co-op British pak choi, trimmed and leaves separated
- 1/2 tbsp Co-op olive oil
- 1 clove garlic, finely sliced
- 2.5cm ginger, peeled and finely sliced
- 40g Co-op jumbo cooked prawns
- 320g pack Co-op Chinese stir fry
- 1 tsp fish sauce
- 1 lemon
- Freshly ground black pepper
Method
- Put the pak choi in a pan of boiling water, cover and cook for 2-3 mins until just tender
- Drain, then immerse in a bowl of cold water
- Heat the oil in a frying pan and cook the garlic and ginger for 2 mins
- In the same pan, stir fry the prawns for 1 minute, then add the vegetables and cook for 1 more minute
- Add the fish sauce and the zest and juice of 1/2 the lemon and cook for 3-4 mins
- Drain the pak choi, then lay the leaves out and divide the mixture between them
- Serve with the rest of the lemon, cut into wedges, and a sprinkling of black pepper
