  • 200g pack Co-op British pak choi, trimmed and leaves separated
  • 1/2 tbsp Co-op olive oil
  • 1 clove garlic, finely sliced
  • 2.5cm ginger, peeled and finely sliced
  • 40g Co-op jumbo cooked prawns
  • 320g pack Co-op Chinese stir fry
  • 1 tsp fish sauce
  • 1 lemon
  • Freshly ground black pepper


  1. Put the pak choi in a pan of boiling water, cover and cook for 2-3 mins until just tender
  2. Drain, then immerse in a bowl of cold water
  3. Heat the oil in a frying pan and cook the garlic and ginger for 2 mins
  4. In the same pan, stir fry the prawns for 1 minute, then add the vegetables and cook for 1 more minute
  5. Add the fish sauce and the zest and juice of 1/2 the lemon and cook for 3-4 mins
  6. Drain the pak choi, then lay the leaves out and divide the mixture between them
  7. Serve with the rest of the lemon, cut into wedges, and a sprinkling of black pepper
