  • 1 tbsp piri piri seasoning 1 tbsp Co-op olive oil
  • 1 tbsp Co-op clear honey 1 tbsp lemon juice
  • 520g pack Co-op British chicken thigh fillets
  • For the slaw
  • 1 tbsp fresh orange juice
  • 1 tsp Co-op clear honey
  • 2 tbsp Co-op olive oil
  • 3 tbsp Co-op low fat natural yogurt 40g savoy cabbage, shredded
  • 1 celery stick, diagonally sliced
  • 1/2 small apple, thinly sliced
  • 1 small carrot, cut into thin strips
  • 2 spring onions, one finely chopped, one diagonally sliced


  1. Put the piri piri seasoning, olive oil, honey and lemon juice in a large bowl
  2. Add the chicken thighs, season and stir to coat
  3. Cover and chill for at least 2 hours
  4. Cook the chicken thighs in a griddle pan over a medium-high heat for 7-8 mins, or until cooked through, turning occasionally
  5. Allow to cool completely
  6. Meanwhile, make the slaw. Whisk the orange juice and honey in a large bowl, then slowly drizzle in the olive oil, whisking constantly, until combined
  7. Add the yogurt, whisk again, then add the veg and apple, reserving a little spring onion to garnish
  8. Toss to coat and season with black pepper
  9. Pack the slaw and two chicken thighs
  10. Garnish with the reserved spring onion when ready to serve
