  • 2 Co-op British pork loin steaks
  • 6 leaves basil, or 1 pinch dried
  • 2 slices Co-op Parma ham
  • 1 tbsp Co-op unsalted butter
  • 1 tbsp Co-op olive oil
  • 2 courgettes, peeled into ribbons
  • 2 Co-op British leeks, sliced lengthways into strips
  • 1 tsp leaves thyme, or quater of a tsp dried
  • Zest and juice of 1/2 a lemon


  1. Place the pork steaks between 2 sheets of greaseproof paper and flatten with a rolling pin to 1cm thick
  2. Top each steak with 3 basil leaves, or sprinkle with dried basil, then wrap with a slice of Parma ham
  3. Heat 1/2 the butter and olive oil in a pan and fry the steaks for 5 mins on each side until cooked through
  4. Meanwhile, heat the remaining butter and oil in a separate pan and fry the courgette, leeks and thyme for 5 mins
  5. Add the lemon zest and juice to the veg, and serve alongside the steaks
