
Pork steaks with parma ham

Ingredients
- 2 Co-op British pork loin steaks
- 6 leaves basil, or 1 pinch dried
- 2 slices Co-op Parma ham
- 1 tbsp Co-op unsalted butter
- 1 tbsp Co-op olive oil
- 2 courgettes, peeled into ribbons
- 2 Co-op British leeks, sliced lengthways into strips
- 1 tsp leaves thyme, or quater of a tsp dried
- Zest and juice of 1/2 a lemon
Method
- Place the pork steaks between 2 sheets of greaseproof paper and flatten with a rolling pin to 1cm thick
- Top each steak with 3 basil leaves, or sprinkle with dried basil, then wrap with a slice of Parma ham
- Heat 1/2 the butter and olive oil in a pan and fry the steaks for 5 mins on each side until cooked through
- Meanwhile, heat the remaining butter and oil in a separate pan and fry the courgette, leeks and thyme for 5 mins
- Add the lemon zest and juice to the veg, and serve alongside the steaks
