  • 2 tsp sunflower oil
  • 1 clove garlic, sliced
  • 2.5cm fresh ginger, sliced into matchsticks
  • 1 red chilli, deseeded and finely sliced
  • 1/2 cucumber, peeled into ribbons
  • 1 carrot, peeled into ribbons
  • 1/2 red pepper, deseeded and finely sliced
  • 15g Co-op cashew nuts
  • 250g Co-op fresh egg noodles
  • 100g Co-op fresh raw prawns
  • Freshly ground black pepper
  • 1 tsp soy sauce
  • 1 tsp sesame seeds


  1. Heat the oil in a large frying pan
  2. Stir fry the garlic, ginger and chilli for 2 mins
  3. Add the cucumber, carrot, red pepper and cashew nuts, and stir fry for 5 mins more
  4. Add the noodles and prawns and fry until the prawns have turned pink and the noodles are cooked
  5. Season with pepper, add the soy sauce and sesame seeds and toss together
  6. Cook for a further 1 minute, divide between 2 bowls and serve
