  • 1/2 x 210g ball Co-op Italian lighter mozzarella, torn or thinly sliced
  • 4 Co-op wholemeal pittas
  • 100g Co-op Italian passata
  • 40g Co-op British lighter grated mature cheese
  • 40g Co-op Milano salami, torn or sliced into strips
  • 40g Co-op British baby button mushrooms, sliced
  • 115g bag Co-op baby leaf salad
  • 1 spring onion, thinly sliced
  • 225g pack Co-op Irresistible cherry tomatoes, halved
  • 1 tsp Co-op extra virgin olive oil
  • 1 tsp Co-op white wine vinegar
  • Small handful basil, leaves only


  1. Preheat the oven to 220°C/fan 200°C/ gas 7
  2. Line a large baking tray and lay the mozzarella on kitchen paper to dry
  3. Place the pitta breads on the lined tray and spread with the passata
  4. Scatter with the grated cheese, salami, mushrooms and mozzarella
  5. Bake for 10-15 mins, until the cheese is bubbling and golden
  6. Meanwhile, toss the salad leaves with the spring onion, cherry tomatoes, oil and vinegar, then season
  7. Scatter the pizzas with basil leaves and serve alongside the salad
