Ingredients
- 1 red onion, peeled and finely chopped, or 4 spring onions, trimmed and finely chopped
- 1 tbsp olive oil
- 200g spinach leaves, finely chopped
- 2 garlic cloves, peeled and finely chopped
- 4 tbsp crème fraîche
- Finely grated zest of 1/2 lemon
- Handful fresh chives, chopped (optional)
- 320g sheet puff pastry
- 4 Co-op Freedom Foods Scottish salmon fillets
- 1 egg, beaten
Method
- Preheat the oven to 200°C/fan 180°C/Gas 6
- Gently soften the red onion in the oil for about 5 minutes
- Add the spinach and garlic, mix and heat gently until just wilted. Then add the crème fraîche, lemon zest, chives (if using) and some black pepper. Mix
- Roll the pastry out to make it slightly larger and cut it into 4 pieces
- Rest a fillet on one half of each piece of pastry
- Spoon 1/4 of the spinach mix on top of each piece of fish
- Brush the pastry edges with the beaten egg, fold the pastry over and seal
- Trim the parcels and make a fork pattern around the edges
- Use the pastry scraps to cut small fish shapes to decorate the parcels
- Brush with the remaining egg
- Bake on a hot baking tray for 15-20 minutes or until the pastry is golden, and both fish and pastry are cooked through
