Ingredients

  • 1 red onion, peeled and finely chopped, or 4 spring onions, trimmed and finely chopped
  • 1 tbsp olive oil
  • 200g spinach leaves, finely chopped
  • 2 garlic cloves, peeled and finely chopped
  • 4 tbsp crème fraîche
  • Finely grated zest of 1/2 lemon
  • Handful fresh chives, chopped (optional)
  • 320g sheet puff pastry
  • 4 Co-op Freedom Foods Scottish salmon fillets
  • 1 egg, beaten

Method

  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Gently soften the red onion in the oil for about 5 minutes
  3. Add the spinach and garlic, mix and heat gently until just wilted. Then add the crème fraîche, lemon zest, chives (if using) and some black pepper. Mix
  4. Roll the pastry out to make it slightly larger and cut it into 4 pieces
  5. Rest a fillet on one half of each piece of pastry
  6. Spoon 1/4 of the spinach mix on top of each piece of fish
  7. Brush the pastry edges with the beaten egg, fold the pastry over and seal
  8. Trim the parcels and make a fork pattern around the edges
  9. Use the pastry scraps to cut small fish shapes to decorate the parcels
  10. Brush with the remaining egg
  11. Bake on a hot baking tray for 15-20 minutes or until the pastry is golden, and both fish and pastry are cooked through
