  • 160g penne pasta
  • 2 x Co-op Irresistible pork sausages
  • 1/2 tbsp Co-op olive oil
  • 1/2 onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1 tbsp Co-op Irresistible balsamic vinegar
  • 1 x 400g can Co-op chopped tomatoes
  • 1 tsp dried oregano (optional)
  • 1 tbsp Co-op tomato purée


  1. Cook the pasta according to the pack instructions. Meanwhile, remove the skin from the sausages and roll the meat into 16 small meatballs
  2. Heat the oil in a frying pan over a medium heat and fry the meatballs for 2 mins
  3. Add the onion and garlic to the pan and gently fry with the meatballs for 3 mins more, until brown all over
  4. Add the balsamic vinegar and simmer for a couple more mins, until the vinegar has reduced slightly
  5. Add the chopped tomatoes, oregano, if using, and tomato purée, and simmer gently for a few mins
  6. Serve the hot meatballs on top of the pasta and season with freshly ground black pepper
