Ingredients
- 160g penne pasta
- 2 x Co-op Irresistible pork sausages
- 1/2 tbsp Co-op olive oil
- 1/2 onion, finely chopped
- 1 clove garlic, finely chopped
- 1 tbsp Co-op Irresistible balsamic vinegar
- 1 x 400g can Co-op chopped tomatoes
- 1 tsp dried oregano (optional)
- 1 tbsp Co-op tomato purée
Method
- Cook the pasta according to the pack instructions. Meanwhile, remove the skin from the sausages and roll the meat into 16 small meatballs
- Heat the oil in a frying pan over a medium heat and fry the meatballs for 2 mins
- Add the onion and garlic to the pan and gently fry with the meatballs for 3 mins more, until brown all over
- Add the balsamic vinegar and simmer for a couple more mins, until the vinegar has reduced slightly
- Add the chopped tomatoes, oregano, if using, and tomato purée, and simmer gently for a few mins
- Serve the hot meatballs on top of the pasta and season with freshly ground black pepper
