Big Bag Option

Ingredients

  • 1 tbsp Co-op olive oil, plus extrafor brushing
  • 1 red onion, sliced
  • 1 red and 1 yellow pepper, sliced
  • 1 tsp each paprika and ground cumin
  • 1 garlic clove, finely chopped
  • ½ tsp dried oregano
  • 2x 125g cans Co-op mackerel fillets in tomato sauce
  • 1 avocado, mashed
  • 30g Co-op cherry tomatoes, chopped
  • 1 lime, ½ juiced, 1/2 cut into wedges
  • 8 Co-op mini wheat and white tortilla wraps
  • 2 tbsp chopped coriander
  • (Optional) Co-op smoky BBQ 10 minute marinade

Method

  1. Heat the oil in a large frying pan, then cook the onion and peppers for 5-6 mins over a medium-high heat
  2. Add the paprika, cumin, garlic and oregano, cook for 1 minute, then add the mackerel. Gently toss everything together, then season
  3. While the filling is cooking, combine the avocado, tomatoes and half the lime juice, then season
  4. Heat a griddle or frying pan to medium-high and brush the tortilla wraps with the extra oil, then cook for 20-30 seconds on each side, until just golden
  5. Divide the filling between them, then top with the avocado mixture and a squeeze of lime juice
  6. Scatter over the coriander, then serve with lime wedges on the side

Optional: At step 2, add 1/2 a packet of Co-op smoky BBQ marinade instead of paprika, cumin and oregano.
