
Souffle omelette with spiced beef and spinach

Whisking the egg whites makes the omelette really fluffy - it’s great with the spicy beef

Ingredients
- 1 tbsp Co-op olive oil
- 1 onion, thinly sliced
- 250g Co-op 12% fat beef mince
- 1/2 tsp crushed chillies
- 2 tsp smoked paprika
- 1 tsp mixed herbs
- 1 garlic clove, sliced
- 90g Co-op British baby spinach
- 12 Co-op British eggs, separated
- 60g Co-op Feta, crumbled
Method
- Heat the olive oil in a large nonstick frying pan over a medium-high heat
- Once hot, add the onion and cook for around 10 mins or until soft and golden, stirring occasionally
- Add the beef mince and brown for 5 mins, breaking it up with a wooden spoon
- Add the chilli, paprika, herbs and garlic
- Stir well to combine and cook for a further 2 mins
- Season to taste
- Add the spinach to the pan and fold through the beef until wilted
- Transfer to a bowl and cover to keep warm
- Wipe the pan clean with kitchen towel, then return it to the hob set over a medium heat
- Whisk the egg whites for 2 mins or until frothy
- Whisk the yolks into the egg whites
- Season
- Pour quarter of the egg into the pan and let it settle on the bottom to cook for 3-4 mins, then add quarter of the spicy beef and Feta to half of the omelette
- Fold the omelette over to encase the beef and cheese, then cook for a further 2-3 mins
- Transfer to a plate (cover to keep warm while you cook the others) and repeat 3 times with the remaining ingredients
