  • 1 medium Co-op cauliflower cut into florets (about 450g of florets)
  • 20g Co-op unsalted butter
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 1 tsp cumin seeds
  • 1 tsp ground coriander
  • 1 tbsp flat leaf parsley, chopped
  • 1 tbsp coriander, chopped
  • 1/2 tsp dried chilli flakes


  1. Bring a large pan of water to the boil and cook the cauliflower for 10 mins, until tender
  2. Drain, return to the pan and allow to steam dry for a couple of minutes
  3. Meanwhile, heat the butter in a frying pan over a medium-high heat and fry the onions for 5 mins, until soft but not coloured
  4. Stir in the garlic, cumin seeds and ground coriander, and continue to fry for another 3-4 mins, until fragrant
  5. Add the cauliflower to the pan and mash with a potato masher, or blitz with a stick blender
  6. Stir in the chopped parsley and coriander, and the chilli flakes to serve
