
Spinach and pistachio pilau

Ingredients
- 1 1/2 tbsp vegetable oil
- 2 red onions, sliced
- 2 cloves garlic, sliced
- 1 tbsp garam masala
- 1 tsp turmeric
- 50g raisins
- 350g Co-op basmati rice
- 700ml vegetable stock, made with 1 stock cube
- 200g Co-op spinach
- 30g pistachios, shelled and roughly chopped
Method
- Heat the oil in a large pan and gently fry the onions for 6-8 mins, until soft
- Add the garlic and spices and continue to cook for another 2-3 mins
- Add the raisins and basmati rice and fry for 2-3 more mins before adding the stock
- Bring to a simmer, cover and cook for 15 mins, until the rice has absorbed the liquid
- Check after 10 mins – if the rice is sticking, add a little more water
- When cooked, turn off the heat and add the spinach
- Cover and leave for 10 mins while the spinach wilts
- Stir the wilted spinach through the rice and season
- Scatter over the pistachios
- Serve the pan at the table so everyone can help themselves
