Ingredients

  • 1 1/2 tbsp vegetable oil
  • 2 red onions, sliced
  • 2 cloves garlic, sliced
  • 1 tbsp garam masala
  • 1 tsp turmeric
  • 50g raisins
  • 350g Co-op basmati rice
  • 700ml vegetable stock, made with 1 stock cube
  • 200g Co-op spinach
  • 30g pistachios, shelled and roughly chopped

Method

  1. Heat the oil in a large pan and gently fry the onions for 6-8 mins, until soft
  2. Add the garlic and spices and continue to cook for another 2-3 mins
  3. Add the raisins and basmati rice and fry for 2-3 more mins before adding the stock
  4. Bring to a simmer, cover and cook for 15 mins, until the rice has absorbed the liquid
  5. Check after 10 mins – if the rice is sticking, add a little more water
  6. When cooked, turn off the heat and add the spinach
  7. Cover and leave for 10 mins while the spinach wilts
  8. Stir the wilted spinach through the rice and season
  9. Scatter over the pistachios
  10. Serve the pan at the table so everyone can help themselves
