Ingredients
- 1 tbsp vegetable oil
- 2 Co-op tortillas
- 1 Co-op British sirloin steak
- 1 small onion, finely sliced
- Half a red pepper, deseeded and sliced
- 8 baby gem lettuce leaves
- 100g Co-op salsa
- 60g Co-op guacamole
- 2 tbsp sour cream
Method
- Preheat the oven to 190°C/fan 170°C/Gas 5
- Lightly grease 2 ovenproof bowls with a little of the vegetable oil
- Heat a frying pan on a medium heat and warm the tortillas for 5-10 seconds on each side
- Put a tortilla in each bowl and gently mould it to fit inside
- Bake for 7-10 mins until crisp and starting to brown
- Remove the bowls from the oven and turn the heat to low
- Meanwhile, trim any excess fat from the steak and cut into thin strips
- Heat the rest of the oil in a frying pan and cook the onion and pepper for 4-5 mins over a medium heat, until starting to soften
- Remove from the pan and keep warm in the oven
- Add the steak to the pan and cook for about 3 mins, or longer if you like your steak well done
- Fill the bowls with the lettuce leaves, onion and pepper mixture and steak
- Divide the salsa, guacamole and sour cream between them and enjoy
