Ingredients

  • 1 tbsp vegetable oil
  • 2 Co-op tortillas
  • 1 Co-op British sirloin steak
  • 1 small onion, finely sliced
  • Half a red pepper, deseeded and sliced
  • 8 baby gem lettuce leaves
  • 100g Co-op salsa
  • 60g Co-op guacamole
  • 2 tbsp sour cream

Method

  1. Preheat the oven to 190°C/fan 170°C/Gas 5
  2. Lightly grease 2 ovenproof bowls with a little of the vegetable oil
  3. Heat a frying pan on a medium heat and warm the tortillas for 5-10 seconds on each side
  4. Put a tortilla in each bowl and gently mould it to fit inside
  5. Bake for 7-10 mins until crisp and starting to brown
  6. Remove the bowls from the oven and turn the heat to low
  7. Meanwhile, trim any excess fat from the steak and cut into thin strips
  8. Heat the rest of the oil in a frying pan and cook the onion and pepper for 4-5 mins over a medium heat, until starting to soften
  9. Remove from the pan and keep warm in the oven
  10. Add the steak to the pan and cook for about 3 mins, or longer if you like your steak well done
  11. Fill the bowls with the lettuce leaves, onion and pepper mixture and steak
  12. Divide the salsa, guacamole and sour cream between them and enjoy
