
Sticky lemon chicken

Once cooked, both the chicken and cabbage freeze really well - just add mash for a delicious meal made in advance

Ingredients
- 2 tbsp lemon juice
- 1 tsp Co-op wholegrain mustard
- 1 tbsp dry or medium sherry (optional)
- 2 1/2 tbsp Co-op clear honey
- 2 tsp sunflower oil
- 2 Co-op British chicken breasts
- 200g Co-op British red cabbage, shredded
- 1 Co-op British apple, peeled, cored and diced
- Pinch cinnamon
- 1 tbsp cider vinegar
- 400g pack Co-op mashed potato
Method
- Preheat the oven to 220℃/fan 200℃/Gas 7
- Heat the lemon juice, mustard, sherry, if using, 2 tbsp of the honey and the oil in a small pan until simmering
- Put the chicken on a baking tray, make 3 cuts in the top of each breast, then pour over the sauce, turning to coat
- Roast for 25 mins, basting halfway through
- Meanwhile, put the cabbage in a pan along with the apple, cinnamon, cider vinegar and the rest of the honey
- Top up with boiling water until the cabbage is just covered, and simmer, lid on, for 25 mins
- Heat the mash according to the pack instructions, drain the cabbage and serve alongside the chicken
