Stilton broccoli and bacon pasta

  • 1/2 medium broccoli
  • 160g Co-op penne pasta
  • 2 rashers Co-op unsmoked back bacon
  • 50g Co-op Loved by Us light soft cheese
  • 65g Co-op Truly Irresistible mature Stilton, crumbled


  1. Cut off and discard the broccoli stalk. Cut the head into small florets
  2. Cook the pasta like it says on the pack, adding the broccoli for the last 4-5 minutes, until the pasta and broccoli are just cooked
  3. Meanwhile, cut the bacon into 1cm pieces and fry until crispy, stirring to separate the pieces
  4. Drain off the fat
  5. Drain the pasta and broccoli, reserving 2 tbsp of the cooking water
  6. Return to the pan and stir in the soft cheese, Stilton and reserved cooking water
  7. Heat gently for a minute, until the Stilton melts. Season with black pepper
  8. Serve in bowls with the bacon sprinkled on top.
