  • 135g pack strawberry or raspberry jelly
  • 400g fresh strawberries
  • 1 tbsp vanilla extract
  • 150ml whipping cream


  1. Dissolve the jelly in 200ml boiling water. Add 100ml cold water
  2. Leave to cool, but don't let it set
  3. Hull and mash the strawberries into a puree
  4. Add the vanilla extract to the cream and whip into soft peaks
  5. Mix 3/4 of the strawberry mixture and all of the jelly into the cream
  6. Spoon into glasses and leave to set
  7. To serve, spoon the remaining pureed strawberries on top
