Ingredients
- 100g Co-op 5% fat British beef mince
- 60g Co-op brown rice
- 1 Co-op British leek, sliced
- 1 Co-op British carrot, grated
- 2 tbsp tomato purée
- 6 leaves savoy cabbage
- 400ml vegetable stock, made using 1/2 stock cube
- 1 tbsp sweet chilli sauce
- 2 tbsp coriander, chopped
Method
- Dry fry the mince in a nonstick pan until browned, then add the rice, leek, carrot and tomato purée
- Pour over 350ml boiling water, stir and bring to the boil
- Cover and cook for 30 mins, stirring from time to time, until the rice is tender
- Meanwhile, cut out the tough centre stalk from each cabbage leaf
- Boil the leaves for 2 mins, drain and refresh in a bowl of cold water
- Pat the cabbage dry with kitchen paper
- Add equal amounts of the mince mixture to each leaf and wrap up to make a parcel
- Secure with a cocktail stick
- Mix the stock, chilli sauce and coriander in a pan, and add the parcels
- Bring to the boil, then cover and simmer for 5 mins
- Remove the cocktail sticks before serving.
