Ingredients

  • 100g Co-op 5% fat British beef mince
  • 60g Co-op brown rice
  • 1 Co-op British leek, sliced
  • 1 Co-op British carrot, grated
  • 2 tbsp tomato purée
  • 6 leaves savoy cabbage
  • 400ml vegetable stock, made using 1/2 stock cube
  • 1 tbsp sweet chilli sauce
  • 2 tbsp coriander, chopped

Method

  1. Dry fry the mince in a nonstick pan until browned, then add the rice, leek, carrot and tomato purée
  2. Pour over 350ml boiling water, stir and bring to the boil
  3. Cover and cook for 30 mins, stirring from time to time, until the rice is tender
  4. Meanwhile, cut out the tough centre stalk from each cabbage leaf
  5. Boil the leaves for 2 mins, drain and refresh in a bowl of cold water
  6. Pat the cabbage dry with kitchen paper
  7. Add equal amounts of the mince mixture to each leaf and wrap up to make a parcel
  8. Secure with a cocktail stick
  9. Mix the stock, chilli sauce and coriander in a pan, and add the parcels
  10. Bring to the boil, then cover and simmer for 5 mins
  11. Remove the cocktail sticks before serving.
