
Sweetcorn with stilton dip

Ingredients
- 3 x 250g packs Co-op sweetcorn cobettes
- 90g Co-op Irresistible Stilton
- 6 tbsp Co-op soft cream cheese
- 3 tbsp Co-op sour cream
- 15 jarred jalapeños, finely chopped
- 3 tbsp Co-op olive oil
- Freshly ground black pepper
Method
- Put the sweetcorn cobettes in a pan of boiling water and simmer for 6-8 mins, or until just tender
- Meanwhile, make a dip by mashing up the Stilton, cream cheese, sour cream and jalapeños
- Dust with a pinch paprika
- Brush the sweetcorn with olive oil and sprinkle with freshly ground black pepper
- Grill or barbecue the cobettes for 3-4 mins, slice into rounds and serve with the Stilton dip
