Ingredients
- 75g Co-op low fat Greek style yogurt
- 1/2 tsp turmeric
- 1 tbsp curry powder
- 1 tsp lemon juice
- 1 tsp ginger paste
- 240g pack Co-op skinless cod fillets
- 3 spring onions, finely chopped
- 1/2 red pepper, deseeded and finely chopped
- 1 green chilli, deseeded and finely chopped
- 1 tbsp Co-op olive oil
- 115g cous cous
- 150g Co-op British cauliflower, broken into small florets
- 1 tbsp coriander, chopped
- 100g green beans, halved
Method
- In a bowl, mix together the yogurt, turmeric, half the curry powder, lemon juice and ginger paste
- Add the fish and turn gently to coat
- Leave to marinate for 15 mins
- Meanwhile, gently fry the spring onion, red pepper and chilli in the oil for 4 mins
- Stir in the rest of the curry powder and cook, stirring, for 1 more minute
- Pour in 180ml hot water, bring to a simmer, then add the cous cous, cauliflower and coriander. Stir, cover, and set aside for 10 mins
- Meanwhile, grill the fish on a foil-lined tray for about 10 mins, until cooked through and flaky
- Cook the beans in boiling water for 5 mins
- Drain, stir into the cous cous, and serve with the fis
