Ingredients

  • 600g Co-op Maris Piper potatoes, peeled
  • 75g Co-op unsalted butter
  • 125g Co-op plain flour, plus extra for dusting
  • 100ml Co-op reduced fat crème fraîche
  • Juice and zest of 1 lemon
  • 2 x 100g packs Co-op Irresistible Scottish smoked salmon
  • Salad leaves, to serve

Method

  1. Quarter the potatoes, put in a pan, cover with water and bring to the boil
  2. Simmer for 15 mins, until tender, then drain and return to the pan
  3. Keep the heat on low briefly to dry them out
  4. Add 50g of the butter, season and mash well
  5. Stir in the flour, then halve the dough
  6. Tip half onto a lightly floured surface and roll out to about 1 cm thick
  7. Cut into a large circle, roughly 20-22cm in diameter
  8. Repeat with the rest of the dough
  9. Heat half the remaining butter in a large frying pan and fry one of the scones on both sides for 3-4 mins until lightly golden
  10. Keep warm while you repeat the process with the other scone, then cut each into 8 wedges
  11. Mix together the crème fraîche and lemon juice, then dollop on top of the scones
  12. Divide the smoked salmon between them, and sprinkle with the lemon zest and a grind of black pepper
  13. Serve with the salad on the side
