
Tattie scone with Scottish smoked salmon

A Scottish potato pancake topped with Co-op’s delicious Scottish smoked salmon. Easy to prepare ahead so you can relax when your guests arrive

Ingredients
- 600g Co-op Maris Piper potatoes, peeled
- 75g Co-op unsalted butter
- 125g Co-op plain flour, plus extra for dusting
- 100ml Co-op reduced fat crème fraîche
- Juice and zest of 1 lemon
- 2 x 100g packs Co-op Irresistible Scottish smoked salmon
- Salad leaves, to serve
Method
- Quarter the potatoes, put in a pan, cover with water and bring to the boil
- Simmer for 15 mins, until tender, then drain and return to the pan
- Keep the heat on low briefly to dry them out
- Add 50g of the butter, season and mash well
- Stir in the flour, then halve the dough
- Tip half onto a lightly floured surface and roll out to about 1 cm thick
- Cut into a large circle, roughly 20-22cm in diameter
- Repeat with the rest of the dough
- Heat half the remaining butter in a large frying pan and fry one of the scones on both sides for 3-4 mins until lightly golden
- Keep warm while you repeat the process with the other scone, then cut each into 8 wedges
- Mix together the crème fraîche and lemon juice, then dollop on top of the scones
- Divide the smoked salmon between them, and sprinkle with the lemon zest and a grind of black pepper
- Serve with the salad on the side
