Ingredients

  • 150g Co-op 0% fat Greek style natural yogurt
  • 1 tsp turmeric
  • 4 Co-op cod fillets
  • 1 Co-op British cauliflower
  • 1 tbsp Co-op olive oil
  • Handful coriander, chopped
  • 2 tbsp white wine vinegar
  • 2 tsp Co-op clear honey
  • Juice of 2 limes, zest of 1
  • 1 red chilli, deseeded and finely sliced
  • 4 Co-op British carrots, finely sliced
  • 6 Co-op spring onions, finely sliced diagonally

Method

  1. Mix the yogurt and turmeric in a bowl and season
  2. Add the cod fillets, stir to coat, and put in the fridge to marinate for 30 mins
  3. Meanwhile, preheat the oven to 200ºC/fan 180ºC/Gas 6
  4. Trim and roughly chop the cauliflower, then whizz in a blender or food processor until it resembles rice
  5. Heat the oil in a large frying pan and fry the cauli rice for 4-5 mins, or until tender
  6. Season and stir in the coriander
  7. Keep warm
  8. Line a baking sheet with greaseproof paper and lay the cod on it
  9. Bake in the oven for 15 mins, or until the fish is cooked through
  10. In a bowl, whisk together the vinegar, honey, lime juice and zest, and chilli
  11. Season and add the carrot and spring onion, then toss to combine
  12. Divide the cauliflower rice between 4 plates, then top with the cod and some of the crunchy veg to serve
