  • 4 rashers Co-op Irresistible air dry cured smoked back bacon
  • 400g Co-op Irresistible white sourdough bloomer
  • 41⁄2 tbsp light mayo
  • 1 tbsp wholegrain mustard
  • 40g Co-op baby spinach
  • 120g leftover stuffing balls, pressed into flat patties
  • 75g Co-op cranberry sauce
  • 180 leftover sliced turkey
  • 80g leftover cooked red cabbage or jarred pickled cabbage


  1. Cook the bacon in a dry frying pan until crisp
  2. Drain on kitchen paper and leave to cool
  3. Cut the top off the loaf
  4. Scoop out most of the bread from the inside, leaving a border of about 1cm
  5. Spread the mayo and mustard around the inside of the loaf
  6. Add half the spinach in a layer in the bottom, followed by the stuffing, then the cranberry sauce
  7. Layer the turkey slices on top
  8. Add the bacon, followed by the red cabbage, and finish with the rest of the spinach
  9. Put the lid back on the loaf and wrap tightly in cling film
  10. Chill in the fridge for at least 4 hours
  11. Slice into wedges to serve
