Ingredients

  • 600ml Co-op double cream
  • 2 x 397g cans condensed milk
  • 1 tsp vanilla extract
  • 1 tsp each blue, pink and yellow food colouring gel
  • 2 tbsp Co-op hundreds and thousands
  • 140g Co-op angel layer cake, cut into small cubes
  • 20 Co-op ice cream cones

Method

  1. Put the cream, condensed milk and vanilla extract in a large bowl and beat with an electric whisk until soft peaks form (be careful not to overwhisk)
  2. Divide between three bowls and stir a different coloured gel through each one
  3. Spoon the mixture, alternating the colours, into a 1.8 litre freezerproof container, occasionally scattering over some of the 100s and 1000s and the cake cubes
  4. Run a knife or skewer through the mixture a few times to create a circular swirling pattern, then scatter over the remaining 100s and 1000s and cover
  5. Freeze for at least 6 hours, or until set
  6. Serve the ice cream in 10 of the cones, breaking the ends of the other cones to stick in the tops for a ‘uni-cone’ effect
