Ingredients
- 300g Co-op plain white flour
- 235ml unsweetened almond drink
- 1½ tbsp Co-op vegetable oil, plus extra for greasing
- 7g dried active yeast
- 1 tbsp Fairtrade caster sugar
- Pinch fine sea salt
- 2 tbsp Co-op pure Canadian maple syrup
- 1 tbsp sesame seeds
Method
- Mix 20g flour with 120ml of the almond drink in a saucepan over a medium heat
- Cook for 2-3 mins, stirring continuously, until you have a smooth, thick paste
- Remove from the heat and add a further 100ml of the almond drink, plus the oil, to the mixture
- In a large bowl, whisk together the remaining flour, the yeast, sugar and salt
- Make a well in the middle and pour in the almond drink mixture
- Stir with a wooden spoon until you have a rough dough
- Turn out onto a clean work surface and knead for 10 mins, until smooth and pliable
- Put the dough in a lightly greased bowl, cover with a clean tea towel and leave to rise for 1 hour, or until doubled in size
- Tip the risen dough onto a clean work surface and shape into four even balls
- Transfer to a large baking tray lined with greaseproof paper, spaced at least 5cm apart, and leave to rise for a further 20-25 mins
- Preheat the oven to 180°C/fan 160°C/gas 4
- Mix 1 tbsp maple syrup with 1 tbsp almond drink and brush over the buns
- Sprinkle with the sesame seeds and bake on the middle shelf of the oven for 15-20 mins, until risen and golden
- Brush with the remaining maple syrup, then leave to cool for 15 mins before serving
