  • 1 tbsp Co-op olive oil
  • 1 small onion, finely chopped
  • 100g carrots, diced
  • 125g mushrooms, sliced
  • 1 x 400g can Co-op chopped tomatoes with herbs
  • 1 x 400g can Co-op butter beans, drained and rinsed
  • 1 x 400g pack Co-op fresh mashed potato
  • 20g Co-op Irresistible mature Cheddar, grated
  • Serve with Savoy cabbage (optional)


  1. Heat the oil in a saucepan, add the onion and carrots, and stir
  2. Cover and cook over a low heat for 3 mins. Remove the lid, add the mushrooms and cook for another 5 mins
  3. Add the tomatoes and cook for 10 mins, stirring until most of the liquid has evaporated, then add the butter beans and heat through
  4. Heat the mashed potato according to the instructions on the packet, and preheat the grill
  5. Transfer the beans and mushroom mixture to a heatproof dish, spread the hot potato on top, and sprinkle with cheese
  6. Grill until the cheese is melted and bubbling
  7. Serve with shredded, steamed Savoy cabbage on the side, if you like
